Wafer paper is a flexible, edible sheet of paper that's often used for cake decorating. It's also known as rice paper, and is usually made from potato or rice starch, water, and vegetable or sunflower oil. Wafer paper has a similar texture to printer paper, but it's vegan, gluten-free, and free from most allergens. It has a subtle flavor and won't interfere with the taste of a cake. Wafer paper is more stiff and not as flexable as Sugar Paper
